The region to the west of Valencia mainly presses red wines from the Bobal grape on its roughly 40,000 hectares despite, or even because of, the extreme temperature fluctuations prevalent in that region. These wines are often combined with portions of Temperanillo and Cabernet Sauvignon.
40 degrees Centigrade in summer and minus 15 degrees in winter result in intense red wines rich in tannin from old vine shoots while the yield per hectare is low.
