The denomination of "Champagne" is subject to manifold regulations and control processes. The noble drink is produced exclusively from grapes stemming from the region of Champagne, and its cultivation as well as production are subject to strictly defined rules.
The basis of an excellent Champagne is formed by a felicitous composition, the blending of wines of different grape varieties. Only a few Millésime Champagnes result from wines of an individual vintage, mostly of particularly high quality.
In a second fermentation process the characteristic perlage is created. A well-balanced composition of sugar and yeast (dosage) dissolved in the wine is processed on the rocking console and positioned at an increasingly steeper angle on a daily basis. The type of Champagne depends on the amount of dosage. The smaller the dosage, the dryer the Champagne: ranging from demi-sec via sec to brut and brut nature.
The Benedictine monk Dom Pérignon in the 17th century allegedly was the first to be able to remove the yeast from wine fermented in bottles without loss of the previously produced carbonic acid.
Champagne is the most festive of all drinks and best suited for celebration and enjoyment.
